Banana Bread- Zero Waste Recipe

If you have some old bananas resting on your counter, it is time to make some banana bread.

Bananas are super easy to use in multiple quick and delicious recipes.

Here is how to get creative with bananas to avoid food waste:

  • Make banana bread

  • Freeze bananas to use for smoothies or banana bread later

  • Banana muffins

  • Banana pancakes

  • Banana brownie

Today I decided to make some banana bread with some chocolate chips and nuts.

Bellow is my process. I am honestly annoyed when people separate the ingredients from the process and I have to keep scrolling back and forth.

THIS RECIPE MAKES TWO BATCHES OF BANANA BREAD. I had 6 bananas that were going bad so I had to double it.

  1. Gather all your ingredients

    6 very ripe bananas, peeled (about 3 cups mashed)

    2 butter stick or 2x1/3 cups butter, unsalted, melted

    1 teaspoon baking soda

    2 pinches of salt

    1 cup sugar- add more if want sweeter and less if you want it less sweet

    2 large eggs, beaten

    2 teaspoons vanilla extract

    3 cups all-purpose flour

  2. Heat the oven at 350 F

  3. Melt two butter sticks (2x1/3 butter)

    I like melting the butter in the oven while reaching the temperature. This way you butter your trays at the same time

  4. Mash 6 bananas in a large bowl. The peels can be used for plant fertilizer. See the recipe here.

    If you like chunks of bananas set some fewer mashed bananas away to add it after mixing all the ingredients.

  5. Stir in the 2 melted butter sticks(2x 1/3 cups) in the 6 mashed bananas

  6. Mix 1 cup of sugar and 2 medium eggs, 1 pinch of salt, 1 teaspoon vanilla extract and mix with the banana mix

  7. Add 3 cups of all-purpose flour

  8. Mix it all with an electric mixer for about a minute. If done manually, it takes about 3 minutes of mixing. If you want some chunks of bananas, add the batter you put aside a while ago.

  9. Transfer the batter into a baking

  10. Add your favourite toppings such as nuts or chocolate chips on

  11. Bake for 45- 60 minutes. Check if done with a toothpick or skewer. If the toothpick or wooden skewer inserted into the center comes out clean, your banana bread is baked.

  12. Take it out of the oven and let it cool down for a bit.

  13. Store the banana bread in a cotton cloth. Lasts up to 5 days.
